While on our most recent trip to the Bahamas, we spent a couple of days visiting some friends in Miami. One night, we ended up going to a legit pizza restaurant called Spris, named after a cocktail common in northern Italy. The cocktail simply consists of Aperol and Prosecco with a splash of soda water. This drink couldn’t be easier to make and is super delicious any time of the day. The great thing about this restaurant is that they garnish the cocktail not only with the traditional orange wedge, but with a yummy green Italian olive as well. The end result is bubbly, sweet, bitter and salty.
3 ounces Prosecco or dry sparkling wine
1 1/2 ounces Aperol
Splash of soda water
Place a few cubes of ice (if using) into a wine glass. Add Prosecco, Aperol and soda water. Garnish with an orange and a green olive or two. It’s really that easy. Salute!
